The Regulator Presents: Michael Pollan
Michael Pollan is the author of The Omnivore’s Dilemma, Food Rules, and four other books, all New York Times bestsellers. His new book, Cooked: A Natural History of Transformation tracks his efforts to master a single basic recipe using one of the four classical elements – fire, water, air, and earth. North Carolina barbecue pit masters tutor him in the primal magic of fire; a Chez-Panisse-trained cook schools him in the art of braising; a celebrated baker teaches him how air transforms grain and water into a fragrant loaf of bread; and several mad-genius “fermentos” (a tribe that includes brewers, cheese makers and picklers) reveal how fungi and bacteria can perform the most amazing alchemies of all.
Joining Michael Pollan in conversation will be Billy Cotter of Toast in downtown Durham and Andrea Reusing, a James Beard Award winner from Chapel Hill’s Lantern Restaurant. Come early! There will (of course) be food trucks, beer, wine, and etc.
